Amy began her yak project in 2008 with one bottle calf. Her small herd has grown into 7 cows and a bull. In the spring she combs each yak to collect their fiber which then she sells to fiber enthusiasts. She uses the male offspring for meat production as the yak meat is extremely lean and delicious (similar to bison). The females are milked for a short period during the spring months and the milk is converted into cheese spreads. Yaks don't produce a lot of milk but the fat content results into a high yield of cheese. Amy sells her yak cheese in 4oz containers. Flavors include Plain, Jalapeno Bacon, Chocolate Orange.
